By the time Thursday rolls around, I’m ready to throw in a frozen pizza & use paper plates. Anyone else get this feeling? I’m a big lover of pizza and wings and this buffalo cauliflower is a great way to get those same flavors and sneak in a vegetable. I’ve always got pizza in the freezer & a fresh head of cauliflower ready to go for nights like this!

Buffalo Cauliflower

Ingredients:

1 head of Cauliflower, chopped into florets

3 TBS Olive oil

2 TBS butter, melted

1/3 cup Frank's Red Hot Sauce (original, not buffalo)

1 clove of garlic, minced

Instructions:

1. Preheat oven to 400* F

2. Toss cauliflower in olive oil, coating thoroughly. Place on sheet pan lined with parchment paper.

3. Roast cauliflower in oven for 25-30 mins until crispy & brown. You can also bake your frozen pizza during this time.

4. Meanwhile, make your buffalo sauce: mix melted butter, garlic & hot sauce thoroughly.

5. Once cauliflower is done cooking, coat in buffalo sauce. This is most easily done by placing cauliflower in a big bowl, pouring on the sauce, and mixing around.

6. Serve immediately & enjoy that frozen pizza!
