Hey friends!
What are your MDW plans? Things might look a little different for this holiday this year, but one thing stays the same - the need for a fun & festive menu! We are planning on having a social-distance backyard get-together with some of our friends and I've got a menu full of American fare planned.
-Grilled Buffalo Wings - this recipe is my husband's specialty and an all-time favorite in our house. They're saucy, a bit spicy, and have a great crispy texture from the grill without having to make a big mess frying.
-Pimento Cheese - whenever we have company over, I make this pimento cheese. You can serve with saltine crackers, sturdy chips, or chopped raw veggies. It will be gone in minutes, so make double!! A VERY important note on this - instead of the Tabasco sauce in this recipe, use 1 tablespoon of Frank's Red Hot.
-The "Sparkler" Champagne Cocktail - My friend Natalie came up with this festive play off the traditional champagne cocktail and is bright and sparkling but without the added sugar. Be sure to enjoy with fireworks & make a toast together! (see below for recipe) If you're a Tampa local, be sure to stop by Starkey Market for some farm-fresh blueberries or blackberries.
-Double Strawberry Pretzel Pie - Nothing says summer holidays quite like strawberries. I love that this recipe uses pretzels for the crust because I am gluten free, but luckily GF pretzels taste exactly the same and no one can tell!

The "Sparkler" Champagne Cocktail:
Ingredients: Champagne of choice, bitters, frozen blackberries or blueberries, slices of fresh watermelon.
Method: Place frozen berries at the bottom of a champagne glass. Pour 2 dashes of Angostura bitters on berries. Muddle or swirl in glass. Pour champagne over berries until glass is nearly full. Garnish with thin spears of fresh watermelon.
