Comfort Food to Make Ahead for Busy Seasons Ahead

Hey friends!

I hope you are having a great weekend. Back to school season is just around the corner and by this time in the summer, I start to make a few dishes in double batches & freeze an extra to have for when the back to school exhaustion hits. I don't know about you, but August & September brings me colds and the flu, and homemade comfort food is always the cure. Here's what I've got planned:


Chicken & Dumplings - whenever I'm not feeling well, my mom's chicken & dumplings is a sure-fire fix. Next time you order a big thing of soup from your local Chinese take out, keep the container & use it to freeze soup in.


Homemade Mac & Cheese - It doesn't get any better than mac & cheese. If you make a double batch, freeze one in one of those foil baking pans before you bake the mac & cheese. When you want to make it later, pull out of the freezer and bake at 350 for 45ish mins.


Shepards' Pie - This is another great make-ahead and freeze recipe & this recipe has instructions on how to do that. I like that this is full of veggies and you can use grass fed beef to make it healthy.


Pasta Fagioli Soup - soups are so easy to make ahead and freeze and take out on a busy night. I just make a batch of this and freeze before adding the pasta. When it's time to take out of the freezer, heat it up in a stovetop pot & add cooked pasta before serving.
