Week of 5/17 Meal Plan

Hey friends!
How was your weekend? We spent the weekend binging Hollywood on Netflix & hanging on the porch with Hippo. Here's what I've got planned for the week ahead!
- Gnocchi bolognese bake - I am super excited to try this recipe & am using Trader Joes cauliflower gnocchi instead of traditional gnocchi.
- Paleo chicken tenders - Instead of traditional breadcrumbs, this recipe uses almond flour for super crispy tenders! Serving with sweet potato fries & salad.
- Roasted chicken & spring veggies - To me, a roasted chicken is the quintessential Williams-Sonoma meal & I always feel fancy making it. Be sure to have lemons & butter handy!
- Sheet pan stir fry - this is a tried & true recipe in my house and I absolutely love it. You can serve with rice, rice noodles, or just on its own!
- Breakfast broccoli cheddar "biscuits" - these biscuits (made with almond flour instead of refined flour) are the holy mecca of savory breakfasts. They're cheesy, filling & feel indulgent without the guilt. This is a great way to use up leftover roasted or rotisserie chicken if you don't want to use sausage.
Treats & Drinks
- Limoncello basil cooler : Mix 1 oz limoncello, 1 oz vodka, 1/2 oz each fresh lemon juice & simple syrup & 1 oz club soda or seltzer water. Garnish with fresh basil. - Better-for-you Peanut Butter Balls: in a bowl, mix 1 cup peanut butter, 1/3 cup each of coconut flour & powdered sugar. Mold into 16 equal-sized balls. Chill for 15 mins in freezer. in a double broiler, melt 1 cup dark chocolate chips. Dip each PB ball into melted chocolate & top with sea salt. Chill for an hour or enjoy right away!
- Limoncello ice pops: Mix 1.5 cups of lemonade (you can do 1/3 cup sugar, 1 cup water & 1/3 cup of fresh lemon juice) and 1/3 cup of limoncello. Pour into popsicle mold & freeze overnight. This is my favorite popsicle mold that's silicone & is super easy to take pops out of.
—Southern watermelon basil margs: mix 1/3 cup fresh watermelon juice (canned or fresh watermelon blended) 1 oz lime juice, 1.5 ounces silver tequila & 2 basil leaves in a shaker. Mix well. Rim glass with salt & garnish with more basil.
