Week of 5/24 Meal Plan

Hey friends!
Happy 3 day weekend - no Sunday scaries here!! I hope you all enjoy your extra day off & get time to relax! Here's what I've got planned this week for dinner:
-Puerto rican Chicken & Rice - I love a good pollo con arroz & this recipe looks super easy and flavorful, so I'm excited to try it out.
-Guacamole chicken burgers - this recipe uses Grilled chicken, but I use ground chicken as an alternative. With everything crazy going on right now with the grocery store & meat, ground chicken is a great choice for staying on budget. These burgers are super juicy and have a great texture when grilled. If doing ground chicken, use 1LB ground chicken, 1/2 seeded jalapeño finely diced, 1/2 cup shredded cheddar & 1 tsp garlic powder.
-Crockpot French Dip Sandwiches - My husband loves French dip sandwiches, so this is our "indulgent" meal this week. Plus, I'll never complain about an easy crock pot recipe!
-Cajun popcorn oven-fried chicken - This is another new recipe that I'm trying out this week. I've been gluten free for years now and haven't had fried chicken since I was a teenager, so I'm excited to see if "oven-fried" is as good as the real thing!
Treats & drinks:
Spicy watermelon sparkler - this cocktail is very similar to the watermelon margarita I posted about a few weeks ago but uses Trader Joe's sparking watermelon juice instead for a brighter note! In a shaker, stir (don't shake or it'll explode all over your kitchen like mine) 1/4 cup silver tequila, 1/4 cup Trader Joes sparking watermelon juice, 2 TBS lime juice & jalapeno slices. Pour over ice and top with additional jalapenos if desired.
Chimichurri sauce - in a food processor, blend 1 cup fresh parsley, 2 cloves fresh garlic, 1/3 cup olive oil, 2 TBS red wine or white vinegar. Stir in 1/2 tsp salt & top with pinch of crushed red pepper flakes.
Frozen Mango Margarita - in a blender, blend 1/2 cup ice, 1/2 cup frozen mango chunks, 1.5 oz silver tequila, 1/2 oz orange liquer (triple sec) 1 oz fresh lime juice & 2 tsp maple syrup or agave. Salt or sugar rim to your taste & pour into glass and drink immediately!
