Week of 6/14 Dinner Plan

Hey friends!

How was your weekend? We are just getting back from our beach vacation and getting our lives back in order! Here's what I've got on the menu this week:


Spinach and Ricotta Pasta Bake - I'm a huge pan of a baked Italian pasta dish and this is something that will come together super quick!


Old El Paso Tacos - I've said it before & I'll say it again, I love these taco kits with super cheesy beef. Sometimes you just gotta have a taco night!


Mongolian Beef & Broccoli - Whenever we head to PF Changs, this is my go-to order. I've read that this recipe is just as good as the real thing so I'm ready to try it out!


Brown Sugar Mustard Pork Tenderloin - This is a recipe that I found from blogger @texaflora and it goes so well with homemade apples. I'm pairing with a baked potato & brussels, too.

Key Lime Coconut Martini - this drink is refreshing, bright & has no added sugar! The perfect summer cocktail.

Ham & cheese frittata - this frittata is so easy to Make and sneaks in zucchini. The recipe says microwave but I cook in the oven at 359 for 15-20 mins.


This weekend is Father's Day, so I'll be baking a Key Lime Pie for dessert, too!
