What to Bring to Your Summer Rental House

Hey friends!
Just like most of you, pretty much all of our summer travel was cancelled this year. We had big dreams for Alaska and a fun cruise this summer, but plans have changed! One thing that isn't cancelled is our annual trip to the beach house with our friends. Getting a VRBO/AirBnB is an option for travel this summer that a lot of us are doing! To maximize the fun and minimize the time spent in the kitchen at the beach house rental, we normally bring a few make-ahead things, especially breakfast so we can quickly eat and get out on the water. Here's what you need to bring to get the party started: a breakfast, a snack, a fun dessert, and of course, something caffeinated. I'm also including my favorite summer cocktails, too.
BREAKFAST: Ham and Cheese Frittata - the last thing you want to do on vacation is spend the morning cooking breakfast and having to clean it up, so make an easy frittata ahead of time & bring the paper plates! I love how you can throw pretty much anything into a frittata and call it a day.
SNACK: Pimento Cheese - in case you haven't already figured it out, I love pimento cheese. It's super easy to make ahead because it is good for about a week in the fridge and pretty much anything you dip in it is delicious. We like veggies, pretzels, crackers, chips, adding to a cheeseburger... the list goes on.
DESSERT: Banana cream cheesecake bars - You can't have vacation without a fun splurge dessert. These cheesecake bars are very similar to traditional banana cream pie and are perfect for being out in the sun all day. If you're making it gluten free, these cookies make a great crust.
ALL THE CAFFEINE: Easy Cold Brew - Stay cool in the heat with an iced cold brew. I love using Grady's cold brew bean bags, but you can also use traditional ground coffee to make cold brew.
COCKTAILS: Frozen drinks are always fun on vacation. I love frozen mango margaritas, White Claw Slushies & Skinny Pina Coladas. For a fun cocktail, try: spicy watermelon margs, toasted coconut margaritas, or Aperol spritzes.
