3/30 week dinner plan

Hey friends!

How is social distancing treating you? This week, online school starts up & I'm getting back into a routine with work and a meal plan. Cooking is something that makes me really happy, so I'm sharing this week's dinner plan! Here's what we've got planned:


1. Spicy unstuffed shells with ricotta & tomato sauce - This recipe is SO good!! I use spinach as the greens. If your store doesn't have sausage, you can use ground beef or no meat instead.

2. Cauliflower & broccoli cheddar soup - This is a great way to pack in veggies! We are having with paninis, but you could serve with quesadillas, salad, or just have on its own!

3. Pesto pasta - I'm serving this recipe with my all-time favorite baked eggplant parmesan

4. Parmesan crusted chicken - This dinner comes together super fast in a pinch. I'm serving with potatoes & asparagus.
