Stand Mixer Week! 5/3 Dinner Plan

Hey friends!
It's stand mixer week! I'm a huge fan of my KitchenAid stand mixer and a friend suggested to me that I should do a week of non-dessert recipes for this week's dinner plan! If you don't have a mixer, that's totally okay; all of these recipes can be made without one, they're just easier with a stand mixer! If you are looking for a KitchenAid mixer, here's one that's on sale under $200 and here's a similar off-brand one for $50.
Here's what I've got on deck:
1. Spinach & ricotta calzones - These are a great Saturday night recipe because they take a little bit of time, but it's fun to crank up the music and crack open a White Claw & get cooking!
2. Twice baked stuffed potatoes - These are a great weeknight meal because it's a lot of "set and forget" and there's always leftovers for the next day!
3. Ginger sesame chicken meatballs - This is another Half Baked Harvest recipe that I'm super excited to try! If you're GF like me, just sub for GF sauces.
4. Short rib ragu with mashed potatoes - I love that this recipe can be made in the crock pot & then I'm going to use the stand mixer for the mashed potatoes so they come together in a jiffy!
