Looking to amp up your salad game? This dressing is versatile, flavorful, and makes your salad anything but boring. It goes great with savory flavors like an antipasta salad or sweet flavors like a green goddess salad with apples and other fruits. I make mine with an immersion blender, but a regular blender will do well also.

I love this salad dressing because there are no refined sugars, no chemicals, or ingredients you can't pronounce. I make a big batch every week for my meal prep salad jars and for big salads.

Ingredients:

1 cup mayonnaise or plain Greek yogurt

2 TBS maple syrup

2 TBS red wine vinegar

2 cloves garlic, minced

1/2 sweet onion, diced

1 handful of fresh parsley, roughly chopped

juice of 1/2 lemon

2-3 grinds of black pepper

1 pinch of Italian seasoning (optional)

Method:

1. Gather all ingredients in a tall container (Pyrex measuring cup or tall tupperware)

2. With an immersion blender (or normal blender), blend until smooth.

3. Toss with any salad of your choice

Notes:

- Salad dressing will stay good for about 1 week

- If you wish to add shredded Parmesan or Pecorino, add about 1/3 cup
