Hey friends!
Happy Easter! Here's what I've got cooking in my kitchen this week:
- Homemade hummus on a fun hummus board with Greek chicken - I think this board is so pretty! I am marinating chicken tenderloins in balsamic dressing & grilling them. This is a fun "make a cocktail, turn on some music & pick at dinner" kind of meal
- Pasta fagioli soup - I love that this soup is full of veggies and feels like an indulgent meal. I just sub gluten free pasta for traditional ditalini
- Grilled buffalo wings - If you like buffalo wings, this recipe is right up your alley! I'm making homemade sweet potato fries & a salad to go along with it.
- Ham & asparagus pasta primavera - if you made a ham for Easter, this is the perfect way to use up those leftovers!
- Guilt-free carrot cake - if you don't follow Ambitious Kitchen already, you should! This recipe is grain and refined sugar free but all of the flavor of carrot cake.
