Week of 3/1 Dinner Plan

Hi friends! What's on your dinner menu this week? Here's what I've got planned for this week - every dinner is gluten free, has a veggie & is easy to make. Stay tuned to my stories for tips & tricks on all these recipes!
1. Baked eggplant parmesan - Before finding this recipe, I 100% hated eggplant. It was just too much when fried; but when baked, it's very neutral and this dish really tastes like lasagna but without all the guilt. I use premade breadcrumbs for this recipe to make it easier & serve with pasta tossed in pesto.
2. Parmesan crusted chicken - this recipe can be made in a quick pinch with staple pantry items. My husband thinks it tastes like friend chicken. I'm serving with lima beans and baked sweet potatoes.
3. Steak roll ups - this recipe just happens to be gluten free, whole 30 & delicious. You simply pan sear veggies for flavor, roll them into steak roll ups & grill. I'm serving with roasted potatoes.
4. Crock pot meatball subs - This recipe is great for busy days. I've got a jam-packed Wednesday this week, so this dinner will do! Make your meatballs (or buy premade ones in advance), dump them in the crockpot & you're good to go! I eat gluten free bread and my husband eats "regular" bread. Serving with a big salad.
