Week of 3/15 Meal Plan

Hey friends!
Happy Spring Break! We are headed to Big Sky, Montana this week, but before we go, I've got some cooking to do! We have a good friend watching our pup while we're away, so I'm cooking up some good meals as a thank you for staying with our fur baby. Here's what's on the menu this week in our house:
1. Grilled wings - This is a Saturday night favorite in our house. I love hanging out in the backyard with a drink and 70's music while my husband grills. I make my own buffalo sauce (1/3 cup Franks, 2 TBS butter, 2 freshly minced garlic cloves) for these wings and serve with raw veggies & ranch. I like that these wings are baked first & then grilled so the meat is completely cooked.
2. Crock pot roasted chicken - The easiest way to make a whole chicken is to cook it in the crock pot all day. This recipe gives super tender & easily shred-able chicken. I serve over rice and use the drippings to make gravy.
3. Bourbon Chicken - I tried this recipe for the first time a few weeks ago and it was a total hit. I'm making a double batch this week so we can have it for dinner and make a heat-up container for our dog sitter. A few notes here - I used no-sugar added apple juice and completely omitted the brown sugar in this recipe because it just didn't need it.
4. Bacon, egg & cheese quiche - whenever we have guests in our house, I like to make a make-ahead breakfast to heat up in the morning. This quiche is hearty, filling & easy to make. For "normal" people I use a pre-made pie crust. If you're gluten free like me, I just omit the crust.
