Hey friends!
How's staying home been for you so far? I started online teaching last week and it's been crazy trying to balance it all! This week, I've got some fast & easy recipes so I can get dinner on the table fast!
For the first 3 recipes, I'm using shredded chicken. You can put a few breasts of chicken in the crockpot with water, salt & pepper on low for 6ish hours. After that time, you can shred the chicken and have it on hand to pull recipes together super fast. You can hand shred or throw the cooked chicken into your KitchenAid Stand Mixer and shred it super quickly.
1. Barbecue chicken tostadas - This recipe is so easy! Keep the green onions on hand for this & also for the buffalo nachos.
2. Chicken enchiladas - The great thing about this recipe is you can use corn, flour or no-grain tortillas!
3. Buffalo chicken nachos - These are perfect for an easy Friday night dinner! I add garlic into the buffalo sauce.
4. Cream of mushroom chicken & rice - I make this recipe in the crockpot & just add extra water to the rice. I just use 2 cans of cream of mushroom soup instead of the cream of chicken because it's not gluten free.
